This recipe has been with my family for years. Heres a picture of my Mum and me making this exact recipe 20 something years ago!
Right let’s get right into things. Here is what you will need:
- 150g Caster sugar (any sugar will work fine)
- 192g Flour
- 113g Butter (unsalted)
- Pinch of salt
- 1 tsp Baking soda
- 2 Bananas
- 1 tsp Vanilla
Optional for topping
- Brown sugar
- Chopped walnuts
Cream butter and sugar together. Add egg. Add vanilla. Add dry ingredients. Mix it all together. Mash bananas and add to the mixture. This will make the mixture more wet. If you want your bananas muffins to be a bit lumpy then just fold in the mixed bananas otherwise use your mixer again to make it more smooth.
Fill up your muffin tray (this recipe will make 12 smallish muffins, I usually like to double it for great big muffins!)
Now for the best bit the topping. You can of course skip this part but for me and my sweet tooth this is what really makes the muffins! Sprinkle some brown sugar on top and perhaps some chopped pecans or walnuts if you fancy.
Bake on 180 for 25 minutes. I would suggest just keeping an eye on them though as ovens tend to vary! If unsure if they are done take them out and do the fork test. (Stick a fork in one of the muffins if it comes out clean they are done. If it comes out with something on it they will need to go back in the oven for a few more minutes)
Seriously these are to die for! Bonus points for it being a real simple recipe. You basically just need one bowl and usually have all the ingredients in the house already! I didn’t have any normal baking vanilla so used a vanilla syrup I put in our hot drinks! Even more bonus points that it will make your entire house smell amazing!!!
