This is a staple recipe in our family in the winter months. There is just something so nice sitting down at the table with the family to a warm bowl of chilli.
I tend to make a huge batch which I then separate up into freezer bags and freeze for easy meals later on. Or just go on a week-long chilli binge eating feast. We ain’t fancy in this house hold!
Heres what you will need:
- Minced beef (or whatever kind of meat you fancy.)
- chopped tomatoes
- kidney beans
- chilli powder
- Beef stock
- tomato puree
You can chuck whatever else you have in the house that you need using up in to. Celery, corn… whatever!
First thing first dice your onions up and throw them in a pan with your mince meat to brown.
While the meat is browning, wash and cut up your veggies and chuck them in your slow cooker.
Once the beef and onions are nice and cooked drain out excess oil and then add into the slow cooker. Drain the kidney beans, crack open the tins of chopped tomato, 4 whooping dessert spoons of tomato puree, 2 teaspoons of sugar, 500ML of beef stock added into the slow cooker and give it a good stir.
OH and last but not least the chilli powder! I eyeball this as to how spicy I want the batch of chilli to be. Since my kids woof thing down I tend to take it easy on the chilli powder.
Put your slow cooker on high for about 3 hours, or low for 7/8 hours. That’s it! Really simple! We will usually get about 5 dinners out of this!
